Usage:
1.Preparing the Steamer
- Add Water: Pour 1 to 1.5 cups of water into the bottom of the outer pot.
- Check Level: The water level must sit below the lowest idli plate to prevent the bottom idlis from getting soggy.
- Preheat: Place the pot on the stove (gas or induction) and bring the water to a gentle boil before adding the plates.
2. Loading the Batter
- Grease the Plates: Lightly coat each of the 18 cavities with a few drops of sesame (gingelly) oil or ghee. This prevents sticking.
- Fill Cavities: Pour one ladle of fermented batter into each cavity. Fill them up to 3/4 full to leave room for the idlis to rise.
- Assemble the Stack: Align the plates on the central rod so that the steam holes of one plate sit directly above the idli cavities of the plate below it. This ensures even steam circulation.
3. Steaming Process
- Insert and Close: Lower the loaded plate stack into the preheated pot and secure the lid tightly.
- Cook Time: Steam on medium-high heat for 10 to 12 minutes.
- The Whistle/Vent: If your model has a whistle or vent whistle, let it release steam freely; do not weigh it down.
4. Unmolding the Idlis
- Resting Period: Turn off the heat and let the panai sit undisturbed for 2 to 3 minutes.
- The Water Trick: Dip a spoon or a butter knife into a bowl of cold water.
- Scoop Gently: Run the wet spoon around the edges of each idli cavity to pop the idlis out cleanly without tearing.
5. Cleaning and Care
- Immediate Soak: If any batter sticks, soak the plates in warm water for 5 minutes before scrubbing.
- Wash: Use a mild dish soap and a soft sponge. Avoid steel wool or harsh abrasive pads to protect the glossy stainless steel finish.
- Dry Thoroughly: Wipe the pot and plates dry with a soft cloth immediately after washing to prevent water spots and mineral buildup.
